Fluffy & Light Pancakes
  1. Mix flour, baking powder, sugar, & salt together in a large bowl.

  2. In another bowl add oil, milk & egg; mix until combined.

  3. Make a well in the centre of dry ingredients & pour in wet ingredients. Mix until just combined.

  4. Heat a lightly oiled pan over medium-low heat.

  5. Pour or scoop the batter onto the griddle, using approximately ¼ cup for each pancake; cook until bubbles form & the edges are dry, about 3-4 minutes.

  6. Flip & cook until browned on the other side, about 2-3 minutes.

  7. Repeat with remaining batter, re-oiling pan between each pancake. If you notice they're burning before fully cooked, turn down the heat slightly. If they're taking too long, turn it up slightly.
