For the Stuffing:
2 cups Brussels sprouts, trimmed and halved
1 medium sweet potato, peeled and cubed
1 cup beets, peeled and cubed (roasted or steamed)
2 medium carrots, peeled and diced
½ cup dried cranberries
3 tablespoons olive oil
Salt and pepper, to taste
1 teaspoon dried thyme (optional)
For the Topping:
4 oz goat cheese, crumbled
Fresh parsley or thyme, for garnish (optional)
Instructions:
Step 1: Roast the Butternut Squash
• Preheat your oven to 400°F (200°C).
• Brush the cut sides of the butternut squashes with 1 tablespoon of olive oil and season with salt and pepper. Place them cut-side down on a baking sheet.
• Roast for 25-30 minutes, until tender. Turn them cut-side up and drizzle with honey. • Roast for an additional 10-15 minutes until caramelized.
Step 2: Prepare the Stuffing
• While the squash is roasting, prepare the stuffing. In a large bowl, combine the Brussels sprouts, sweet potato, beets, and carrots.
• Drizzle with the remaining 2 tablespoons of olive oil, season with salt, pepper, and thyme (if using), and toss to coat evenly.
• Spread the vegetable mixture onto another baking sheet and roast for 20-25 minutes, stirring halfway through, until tender and lightly browned.
Step 3: Assemble the Stuffed Squash
• Once both the squash and the stuffing are done roasting, remove them from the oven.
• Fill each butternut squash half with the roasted vegetable mixture.
• Sprinkle the tops with crumbled goat cheese.
Step 4: Final Bake
• Return the stuffed butternut squash to the oven and bake for an additional 5-10 minutes, until the cheese is slightly melted and warmed.
