Mix in dry ingredients just until combined.
Scoop ¼-cup portions (≈90 g). Roll lightly, flatten to thick discs.
Bake 9–11 minutes — edges set, centers pale and soft.
Cool completely before frosting.
Beat cream cheese + butter until smooth.
Add powdered sugar gradually.
Mix in vanilla, almond, salt, and coloring.
Spread generously with an offset spatula.
