Chicken Kabob
  1. Crush and soften onion, then steep in ice

  2. Add onion to a food processor with chicken thighs and chicken breast, and mince

  3. Grate and drain the onion well

  4. Add spices and saffron water to the chicken mixture and mix together

  5. Skewer the chicken mixture, pushing it up and down and pinching to create the signature look

  6. Transfer the skewered chicken to a tray and roast in the oven until cooked

  7. Plate the chicken kabob on top of basmati rice, with bread, lemon, and butter

  8. Top with sumac
