Heat the oil in a large frying pan or Dutch oven over medium heat. Add shallots, garlic, & a pinch of salt, & sauté for 1 minute.
Add flour & a pinch of nutmeg and sauté for 3 minutes, stirring regularly.
Add the Dijon mustard, artichoke hearts, & vegetable stock and stir, scraping the bottom of the pan, until the liquid has thickened.
Add the white beans & nutritional yeast flakes. Stir, cover & simmer for 5 minutes.
Remove lid. Add baby spinach & stir to incorporate. Add oat beverage & olive oil, & mix well. Heat for 1 to 2 minutes. Taste, then add salt & pepper to taste.
Add lemon zest & thin lemon slices. Add a drizzle of olive oil & hot pepper flakes (optional).
Serve with toasted bread.
