Almond Butter Cookie Bars
  1. Preheat your oven to 350°F

  2. In a bowl, whisk together the almond butter, maple syrup, avocado oil, egg, and vanilla

  3. Stir in the coconut sugar until smooth

  4. In another bowl, combine the almond flour, baking soda, and salt

  5. Mix the dry ingredients into the wet until you have a thick, sticky dough

  6. Fold in the chocolate chips

  7. Line a baking sheet and shape the dough into a rough log or rectangle

  8. Bake for 18 to 20 minutes until golden on top

  9. Slice while warm, then let cool for about 20 minutes to set

  10. Optional: put the sliced bars back in the oven for another 10 minutes for a crunchier texture
