Cook pasta according to package directions.
In a large bowl, combine pasta, chickpeas, cherry tomatoes, sweet peppers, pepperoncini peppers, olives, Parmesan cheese, provolone or mozzarella cheese, and spinach.
In a small bowl or jar, whisk together olive oil, red wine vinegar, pepperoncini brine, shallots, garlic, oregano, parsley, salt, and pepper.
Pour dressing over pasta salad and toss to combine.
Make this 1–2 hours ahead so the pasta absorbs the pepperoncini dressing and the flavors get even better.
