Vegan Creamy Cucumber Salad
  1. In a bowl or jar, combine the cucumber, red onion, fresh dill and mint.

  2. Add the yogurt, vegan feta, lemon juice, chili flakes, pistachios, salt and pepper. Add the lid to the jar and shake until everything is combined. Alternatively, stir in the bowl until completely combined.

  3. Enjoy immediately, or store in the fridge with the lemon juice, feta and yogurt separate until you’re ready to combine.
