Bring broth and milk to a simmer. Whisk in grits and cook 5–7 minutes until thick.
Stir in butter, cheddar, salt, and pepper. Keep warm.
Sear sausage slices in butter until caramelized. Remove.
Season and sear shrimp for 1–2 minutes per side. Remove.
Pat dry, season, and sear catfish in butter and oil 3–4 minutes per side.
Spoon grits into a bowl, top with catfish, shrimp, and sausage.
Drizzle Cajun butter and sprinkle with parsley.
