Pre-heat oven to 425.
Slice potatoes into thin sticks and toss into a bowl
Add oil, vinegar, and salt and pepper and toss to coat the potatoes well.
Spread the potato slices out on a baking sheet on top of parchment paper and make sure they are spread out evenly.
Sprinkle with parsley flakes and bake for 30-40 minutes depending on how crispy you like your fries.
