Slice the Croissants: Remove frozen croissants from the freezer and, using a sharp knife, slice them into 1-inch thick discs. (You’ll notice how beautifully layered and intricate the slices look!)
Prepare the Egg Wash: In a shallow bowl, whisk together eggs, milk, cinnamon, vanilla, salt, and sugar.
Dredge the Discs: Dip each croissant disc into the egg mixture, letting it soak for a few seconds to absorb the flavors.
Fry to Perfection: Heat a pan over medium-low heat and melt a little ghee (or butter). Cook each croissant slice for about 2 minutes per side, or until golden brown and crispy on the outside while staying soft and fluffy inside.
Serve & Enjoy: Drizzle with maple syrup, dust with powdered sugar, or top with fresh berries, or maybe a boozy syrup or some caramelized fruit on top.
