Melt 2 tbsp butter in large pot over medium heat, add brown sugar, stir to combine.
Add 2 cups milk and 1 cup cream, mix and scape bottom until simmering.
Take off heat, add ½ tsp salt.
In a separate bowl, whisk egg yolks, sugar until smooth, add cornstarch and whisk (1min)
Temper egg mixture by adding a ladle of hot sugar/cream mix to eggs and whisk. Add the egg mix to the pot.
Heat pot on medium heat, stirring while scraping the bottom, stir until it thickens, stir for an additional minute then turn off heat.
Take of heat add vanilla extract and whisk.
Optional: 1 shot of whiskey or scotch
Mix graham cracker crumbs, sugar, melted butter in bowl, then spread on baking sheet and bake for 10min on 180°c
Spoon custard into bowl, top with whipped cream and graham cracker topping. Enjoy.
