Pasta Cacio e Uova

    8 ozs. tubetti

  1. Heat lard on med. low.

  2. Saute garlic slowly until golden, 7-10 minutes.

  3. Boil tubetti or other short pasta until al dente. Reserve cup of pasta water.

  4. Mix eggs and cheese off the heat, stirring vigorously. Add pasta water by tablespoon if sauce is too thin. Mix in pasta and serve immediately.
