Add olive oil or butter to large pot, and cook the sausage. Set aside.
Add more olive oil or butter, and cook carrots, onion, garlic, and salt all at once for 4 or 5 min (salt helps pull out the moisture, don’t skip).
Add chicken broth or stock, and bring to simmer.
Add elbow macaroni or orzo and kale. Cook until the pasta is done.
Add beans and more salt to taste. Bring back to simmer, then remove from heat and enjoy!
