  1. Peel and dice potatoes and onion. If you want to do this ahead of time make sure to store them in the fridge, fully soaking in water. Drain that water once you are ready to add them.

  2. Over a medium flame, heat ghee in your soup pot, add onions and garlic and brown them until transparent.

  3. Add in stock, coconut milk, water, potatoes and seasoning. Bring to a rolling boil.

  4. Once boiling, reduce the heat and cover. Let simmer until potatoes are cooked, stirring frequently. This normally takes about 45 minutes.

  5. There are two ways to add the bacon, either cook and dice a few slices and add it to the soup during the last 20 or so minutes of cooking (adding some flavor into the base) OR cook and crumble on top when ready to serve.

  6. Top with Green Onions.
