Begin by gathering all the necessary ingredients: ground beef, bay leaves, white vinegar, salt, Mexican dry oregano, garlic cloves, peppercorns, allspice, cloves, and if desired, dry chile guajillo. For added heat, you can also include dry chile árbol.
In a large bowl, combine all the ingredients thoroughly until they are well mixed.
Once everything is blended, portion the chorizo mixture into Ziploc bags.
Lay the bags flat and place them in the freezer for future use.
When you're ready to cook, simply take a bag out the night before and allow it to thaw.
