Dice the chicken breasts and place in the slow cooker
In a bowl, whisk together the soy sauce, water, honey, rice vinegar, sesame oil, garlic, ginger, and chilli flakes
Pour the sauce over the chicken, ensuring everything is well coated
Cook on LOW for 4-5 hours or HIGH for 2½-3 hours, until the chicken is tender and cooked through
Mix the cornflour with cold water to form a slurry, then gently stir it into the sauce in the slow cooker
Cook on HIGH without the lid for 20-30 minutes, until the sauce thickens and becomes glossy
Serve topped with spring onions to garnish with a side of boiled rice and broccoli
