Chop 6 cloves of garlic into very small pieces
Chop a whole bunch of spring onions and a big handful of coriander
Cook the noodles according to package directions
Heat a good splash of oil in a pan
Fry the spring onions first, then add the garlic
Grate in a small piece of ginger and add 2 tablespoons of chilli flakes
Let the ingredients cook together for about a minute
Add 3 tablespoons of soy sauce and 3 tablespoons of apple cider vinegar
Add a large dollop of peanut butter and stir until combined
Add 1 tablespoon of sesame seeds and the coriander
Add a big pinch of sugar
Add a couple of ladles of noodle water to create a smooth, emulsified sauce
Toss the cooked noodles in the sauce until well coated
Serve immediately
