Biang Biang Noodles
  1. Chop 6 cloves of garlic into very small pieces

  2. Chop a whole bunch of spring onions and a big handful of coriander

  3. Cook the noodles according to package directions

  4. Heat a good splash of oil in a pan

  5. Fry the spring onions first, then add the garlic

  6. Grate in a small piece of ginger and add 2 tablespoons of chilli flakes

  7. Let the ingredients cook together for about a minute

  8. Add 3 tablespoons of soy sauce and 3 tablespoons of apple cider vinegar

  9. Add a large dollop of peanut butter and stir until combined

  10. Add 1 tablespoon of sesame seeds and the coriander

  11. Add a big pinch of sugar

  12. Add a couple of ladles of noodle water to create a smooth, emulsified sauce

  13. Toss the cooked noodles in the sauce until well coated

  14. Serve immediately
