  1. Cook bulgur following package directions and let it cool.

  2. Chop Persian cucumbers, parsley, and mint.

  3. Finely chop red onion and roughly chop pistachios.

  4. Crumble feta cheese.

  5. Add rinsed and drained chickpeas.

  6. Top with a dressing of fresh lemon, olive oil, salt, and pepper.

  7. Toss everything together.
