Set eggs out 5-10 minutes in advance
Crack eggs into bowl, whisk until just combined, no more.
Melt knob of butter in pan on medium heat, pour in eggs, and add salt.
Set another knob of butter in a bowl in microwave, melt, and set aside.
After around 30 seconds, start folding eggs in big large motions for large curds, short strokes for small curds.
Plate eggs just before they look finished, they will carry over cooked, pour melted butter over eggs, sprinkle with black pepper, serve.
