Preheat oven to 425°F
Heat 10-12” cast iron skillet over medium-high heat, dry.
After it’s good and hot, remove from the heat and add your butter. Once melted stir in honey and garlic with a wooden spoon.
Turn heat to medium-low and place pan back on heat, add carrots. Toss for 2-3 minutes until garlic is fragrant.
Remove from heat, sprinkle with the salt and pepper.
Place the skillet in the oven for 25 minutes.
Toss the carrots, sprinkle with parsley and serve.
