Wet the matzah sheets under water to soften
Place them in a towel and let sit for about 10 minutes
Cut into squares
Whisk eggs with a pinch of salt and a splash of milk
Heat a pan with butter
Dip each piece of matzah into the egg mixture
Fry on both sides until golden
Add cheese on top, then place another piece over to make a sandwich
Cook until crispy and the cheese is melted
Serve warm with a little jam
