Balsamic Soy Roasted Garlic Mushrooms
  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine the mushrooms with the minced garlic, balsamic vinegar, soy sauce, olive oil, honey if using, and fresh thyme. Season with salt and pepper to taste.

  3. Toss everything together until the mushrooms are well coated.

  4. Spread the mushrooms out on a baking sheet in a single layer.

  5. Roast in the preheated oven for about 20-25 minutes, stirring halfway through, until the mushrooms are tender and caramelized.
