Preheat the oven to 220 °C top/bottom heat (200 °C circulating air). Cut potatoes into 4 or 6 columns. In a large bowl, mix potato wedges with 1 tbsp [1.5 tbsp | 2 tbsp] oil*, "Hello patatas", salt* and pepper*, then place on a baking sheet covered with baking paper and bake in the oven for 25 - 30 minutes until golden brown.
Cut Ciabatta in half, then cut it in half horizontally. Roughly chop baby spinach. Cut mozzarella into 0.5 cm slices.
Roughly grate the tomato into a small bowl. Add ketchup and mix to a dip. Season with salt* and pepper*.
In the large bowl from step 1, crumble hiten cheese, press garlic and mix with chopped baby spinach and 1 tbsp [1.5 tbsp | 2 tbsp] olive oil. Season with salt* and pepper*.
Smear ciabatta halves with butter* as desired and top with spinach filling, spread mozzarella slices over them and bake open in the oven for 5 - 7 minutes.
Fold Spinach Melts, spread on plates and arrange potato wedges next to them, enjoy with tomato ketchup dip. Bon appetit!
