Chicken Marsala Orzo
  1. Dice chicken into small bite size pieces.

  2. Heat oil in a large skillet. Season the chicken with salt and pepper, then sear it for a few minutes until lightly browned.

  3. In the same pan, add the onion and mushrooms. Cook until softened then add the garlic for about a minute.

  4. Pour in the Marsala wine and scrape up any browned bits from the bottom of your pan.

  5. Let it simmer briefly before adding the orzo and chicken broth to the pan, stirring everything together.

  6. Bring everything to a boil then reduce to a simmer.

  7. Cover and cook for about 10-12 minutes, stirring frequently to prevent orzo from sticking to the bottom.

  8. When orzo is cooked and most of the broth is absorbed, add in the heavy cream (or half & half) and Parmesan, then mix until creamy.
