Season the beef and coat with flour.
Brown the beef in batches, then set aside.
Cook onion and garlic, add tomato paste and cook.
Add stock, mushrooms, sugar, carrot, celery, thyme, bay leaf, paprika and seared beef.
Cook in the oven for 2 ½-3 hours.
Fill ramekins with beef filling, place cheese slices on top, cover with pastry, seal and crimp edges.
Brush with egg wash, prick steam holes, and bake until golden brown.
Cool before serving.
