Preheat the oven to 180C.
Place the chicken thighs and drumsticks in a cold shallow casserole dish and add one teaspoon of oil.
Cook on high heat for around 10 minutes until golden and cooked on all sides, turning regularly.
Chop and peel the onions, then peel the orange.
Add the orange peel, chopped onions, oregano, and red wine vinegar to the pan with the chicken.
Season with salt and pepper and place the pan in the oven.
Roast for 45 minutes or until the chicken is falling off the bone.
In a frying pan, heat the orange juice and add the halved cherry tomatoes.
Cook until the tomatoes are fully cooked and add them to the casserole dish.
Drizzle honey over the chicken, sprinkle with pistachios and crumble feta cheese on top.
Serve with couscous or a simple salad.
