In a large mixing bowl, whisk together flour, baking powder, sugar until combined.
Add eggs, butter, milk, vanilla extract, lemon extract, lemon zest and mix until just combined. Don't over-mix! There will be some lumps.
Gently fold in the blueberries.
Spray waffle maker with nonstick cooking spray.
Pour batter in waffle iron. The amount of batter should be determined, based on your waffle iron instructions.
Close and cook for about 4 minutes or until waffles are golden brown and slightly crispy along the edges. Cook time will vary, based on your waffle iron instructions.
Remove waffles from waffle iron onto a plate.
Sprinkle some more blueberries on top along with some maple syrup. Enjoy!
