Heat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, combine the cottage cheese, egg, maple syrup, and vanilla until mostly smooth.
Stir in the oats, cinnamon, baking powder, and salt until a thick, spoonable batter forms.
Scoop small mounds of batter onto the baking sheet, spacing slightly apart.
Lightly swirl the tops with the back of a spoon for a cinnamon-style pattern.
Bake for 12–15 minutes until set and lightly golden on the bottom.
Cool for a few minutes before serving.
