Preheat the oven to 375°F (190°C).
In a bowl, combine orange zest and juice, olive oil, garlic, thyme, rosemary, honey, soy sauce, salt, and pepper. Mix well.
Place the chicken in a roasting pan and rub the marinade all over it, including under the skin if possible. Add quartered onion around the chicken.
Pour chicken broth into the pan and roast for about 75 minutes or until the internal temperature reaches 165°F (75°C), basting occasionally.
Let the chicken rest for 10-15 minutes before carving.
