In a bowl, mix flour, wheat gluten, yeast, and a pinch of salt
Slowly add warm water while stirring until a dough forms
Knead for 5–8 minutes until smooth and elastic
Cover and let rest for 15 minutes
Roll out dough on a parchment-lined tray
Bake at 500°F (260°C) for 3 minutes
Remove from oven and spread pizza sauce, cheese, and pepperoni on top
Return to oven and bake for another 5 minutes, until cheese is bubbling
