In a bowl, mix water, yeast, and sugar. Add flour and mix until combined. Cover and rest for 20 minutes.
Add salt, olive oil, oregano, and olives, then coil fold the dough. Do stretch and folds right after — no waiting needed between folds.
Cover and let the dough rise for about 2 hours or until puffy.
Flour a baking tray lined with parchment paper and gently transfer the dough without deflating it. Flour the top and divide it like shown in the video.
Bake in a preheated oven at maximum temperature for 5 minutes, then reduce to 400°F and finish baking for about 20 minutes.
