TECHNIQUE 1: Place eggs (older eggs will be easier to peel) in a medium heavy saucepan. Add water to cover by 1½". Bring to a boil; immediately remove from heat. Cover and let stand for 10 minutes. Transfer eggs to a bowl of ice water to cool. Gently crack the eggs and peel under running water for ease. (Bon Appetit)
TECHNIQUE 2: Bring water to a boil and sprinkle in some baking soda. Using a safetypin, poke a hole in the bottom air pocket on each egg. Boil eggs for 6 minutes for a jammy egg or 8 minutes for slightly more cooked. Roll cooked eggs on a cutting board to break all over and peel. Fishing line is the best for cutting the eggs.
