Thai Red Curry Stir-Fry
  1. Heat coconut oil in a large wok or skillet over medium-high heat. Add the red curry paste and fry for 60 seconds until fragrant.

  2. Add the red bell pepper, yellow bell pepper, and red onion. Stir-fry for 4 minutes until tender-crisp.

  3. Pour in the coconut milk, fish sauce, and palm sugar. Simmer for 2 minutes until the sauce thickens slightly.

  4. Add the fresh spinach and toss for 30 seconds until just wilted.

  5. Remove from heat and stir in the lime juice. Serve immediately over jasmine rice.
