Crack 9 eggs into an oven-safe dish.
Add 1 burrata ball and ⅓ cup sun-dried tomatoes.
Season with a generous pinch of salt and pepper. You can also drizzle in a tablespoon or two of olive oil if you like.
Pop it into a preheated oven at 400°F for 24-25 minutes.
Top with thinly sliced chives, mix it all up with a spoon, and serve over a toasted low-carb tortilla.
Finish it off with your favorite hot sauce.
