Smash Tacos (E)
Brown ground chicken with taco seasonings. When chicken is thoroughly cooked, add two Tbsp salsa (I use Great Value organic mild or medium salsa) per serving (I usually cook for just one or two) and stir well to combine. Lower heat and add 2 LLC per serving stirring until melted and fully incorporated with taco meat mixture. Spoon into two corn tortillas (per serving) and fold/smash the tortillas in half.
For the tortillas I buy quality corn tortillas (non gmo/organic) -- trust me, it makes a difference. I spritz them with cooking spray and air fry (setting) for 2-3 minutes. Note: I have a basket style air fryer and air fry two tortillas at 400 F for 2 minutes including the preheat time. Since the tortillas overlap in the basket, the top one is ready but the bottom tortilla needs an additional one minute of cook time.
