Plum & Ginger Chicken Noodle Salad
  1. Cook the vermicelli according to the packet instructions, then rinse under cold water and drain well

  2. Whisk together the Ayam Plum Sauce, rice vinegar, soy sauce, sesame oil, ginger, chilli and lime juice

  3. Add the warm water a little at a time until the dressing is smooth and pourable

  4. Add the cooled noodles to a large bowl with the shredded chicken, cucumber, carrot and radish

  5. Pour over the dressing and toss well to combine

  6. Finish with the mint, coriander and fresh red chilli just before serving
