Cranberry Orange Baked Oatmeal
  1. First, preheat your oven to 350F and grease a 9x9" baking dish. Set aside.

  2. In a large bowl, whisk together the eggs, milk, maple syrup, orange juice & zest, oil and vanilla, until combined.

  3. Add in remaining ingredients and stir with a spatula until combined.

  4. Pour mixture into prepared baking dish and spread out evenly. Top with a few more dried cranberries if desired. Transfer baking dish to the oven and cook for 40-45 minutes.

  5. Allow it to cool for about 10-15 minutes before cutting into squares and digging in. It will be quite crumbly when hot, but firms up as it cools down. Enjoy!
