Heat the oven to 215 C convection.
Mix the feta, garlic, honey, pepper, and parsley together with a fork in a bowl.
Cut each filo pastry sheet into 6 squares.
Brush one filo pastry square with oil. Place another square on top and brush it with oil as well. Place one tsp. feta filling at the end of the two squares. Fold from each side to close your “sausage” and roll to form a spring roll (see the photos). Do this until you have about 20 feta rolls in total.
Place the rolls on a baking tray lined with baking paper. Bake for about 20 minutes or until golden and crisp. Let them cool.
Put the ingredients in a pot and give it a quick boil. Pour it into a small bowl.
Serve the feta rolls with chili honey. Enjoy!
