Preheat the oven to 180 degrees.
Cut the peaches in half and remove the stones.
Place the peach halves in an oven-proof dish, cut side up.
Place ½ tablespoon of butter on top of each peach half.
Generously drizzle the peaches with honey.
Bake for 15-20 minutes, or until the peaches are soft and turning golden brown.
If you like, you can grill the peaches for the last 2-3 minutes to get extra caramelising on the top.
Remove from the oven.
Place 2 peach halves in individual serving dishes.
Spoon any honey and peach juices over the top of the baked peaches.
Drizzle honey around the edge of each bowl.
Allow to cool slightly, and then serve with a generous dollop of whipped cream or ice-cream.
Garnish each peach with a sprig or two of fresh basil or mint.
