Jalapeno Salsa
  1. Preheat oven to 425.

  2. Place 9 jalapenos, 3 garlic cloves, and ½ white onion on a baking dish. Roast for 15-20 minutes or until vegetables are soft and tender.

  3. Remove tops of jalapenos. Discard tops.

  4. In a food processor or blender, add roasted jalpapenos, onion, garlic, juice from 2 limes, large bunch of cilantro, 2 tbs olive oil, and 1 tsp salt.

  5. Pulse on high until completely smooth.

  6. Cool in refrigerator. Serve when cooled.
