Roast green beans on a baking sheet with oil, salt, and pepper for 12-15 minutes
Mash potatoes until mostly smooth, adding butter and a splash of reserved potato cooking liquid
Divide pork, mashed potatoes, and green beans between plates. Top pork with apple sauce and serve
