Add eggs, banana, maple syrup, olive oil, vanilla extract, water, oats, baking powder, and salt to a blender and blend until smooth.
Heat a lightly greased skillet over medium-low heat until water sizzles on contact.
Pour ¼ cup batter onto the skillet and cook for 2 to 3 minutes until bubbles appear in the center.
Carefully flip and cook another 2 to 3 minutes until golden brown on both sides.
Serve pancakes warm with maple syrup, fruit, yogurt, or nut butter.
