Oatmeal Banana Pancakes
  1. Add eggs, banana, maple syrup, olive oil, vanilla extract, water, oats, baking powder, and salt to a blender and blend until smooth.

  2. Heat a lightly greased skillet over medium-low heat until water sizzles on contact.

  3. Pour ¼ cup batter onto the skillet and cook for 2 to 3 minutes until bubbles appear in the center.

  4. Carefully flip and cook another 2 to 3 minutes until golden brown on both sides.

  5. Serve pancakes warm with maple syrup, fruit, yogurt, or nut butter.
