Chicken in Peanut Butter
  1. Add some salt and pepper to the flour and use this to coat the meat.

  2. Heat the oil in the electric frying pan and lightly brown the onion and garlic. Brown the chicken and add the tomatoes. Bring to the boil.

  3. Mix the peanut butter with a little hot water and add it to the pan. Season to taste and simmer about 25 minutes, or until the chicken is tender.

  4. Stir in the cream just before serving. Serve with plain rice, sliced bananas, chutney, fried brinjals (aubergines) and grated coconut.
