Whole Lemon Vinaigrette
  1. Start by cutting off the ends of the lemon and discarding them. Then, cut the lemon into quarters and remove the seeds.

  2. Place the lemon pieces into a food processor or blender and blend until finely chopped, which should take about 1 minute.

  3. Next, add the olive oil, fresh herbs, rice vinegar, Dijon mustard, and smashed garlic to the processor. Blend until the mixture is mostly smooth and well combined, which will take about 30 seconds to 1 minute.

  4. Finally, transfer the vinaigrette to a small bowl and whisk in the kosher salt and black pepper.
