Cut potatoes into thick French fry shape and give them an ice bath to remove any starch before spraying with avocado oil, seasoning with salt, pepper, and paprika. Air fry at 400 degrees until golden brown and crispy.
Cut top sirloin steak into thin strips. Season with salt, black pepper, cumin and smoked paprika. Drizzle with olive oil and sear in a smoking hot pan until golden brown, then set aside.
In the same pan, add onions and garlic, tomato paste and seasonings and cook down. Add can of tomatoes with a little bit of water and let simmer for a few minutes.
Assemble the bowl with the fries, steak, and tomato sauce. Top with a dollop of Greek yogurt and some hot melted butter.
