Cook ¼ pound diced bacon in a large ovenproof skillet until crisp, 4 minutes
Remove bacon with a slotted spoon to paper towels.
Pour off and reserve all but 1 tablespoon of the fat.
Add 1 pound halved brussels sprouts to the pan and toss.
Roast in a 450° oven until browned and tender, 20 minutes.
Transfer to a platter.
Add the reserved bacon fat to the skillet and add ½ diced onion and cook until tender.
Stir in 3 tablespoons soy sauce and 2 tablespoons hot honey.
Cook until thickened, 2 minutes.
Drizzle over the sprouts and top with the bacon.
