Drizzle in the olive oil and mix well until the mixture forms a slightly crumbly, moist texture. Sprinkle a little salt and black pepper for flavor.
Arrange the tilapia fillets on the lined baking sheet. Evenly spread the parmesan-artichoke mixture over the top of each fillet, pressing gently so it adheres.
Bake for 12-15 minutes, or until the topping is golden brown and the fish flakes easily with a fork. For extra crispiness, switch the oven to broil for the last 2 minutes.
Take the fillets out of the oven and let them sit for a minute before serving. Top with fresh parsley and a splash of lemon juice for extra flavor. Serve immediately with your favorite side dishes.
