Ingredients
Pat salmon dry. Season both sides with garlic powder, paprika, ½ tsp salt, and ½ tsp pepper.
In a large skillet, heat olive oil and butter over medium-high. Sear salmon, 3–4 minutes per side. Remove and set aside.
Lower heat to medium. Add onion and garlic, cook 2 minutes until soft. Stir in thyme and remaining salt and pepper.
Add orzo, toast for 1 minute. Pour in broth and bring to a boil. Reduce heat and simmer, uncovered, for 8 minutes, stirring occasionally.
Stir in spinach. Cook until wilted, about 2 minutes. Add lemon juice and Parmesan. Stir until creamy.
Return salmon to skillet. Simmer 2–3 minutes, until heated through.
