Pineapple Coconut Cheesecake Jars
  1. Mix graham crumbs, melted butter, and sugar

  2. Spoon 2–3 tbsp into the bottom of each jar and lightly press down

  3. Beat cream cheese until smooth

  4. In another bowl, whip heavy cream and powdered sugar to stiff peaks

  5. Fold whipped cream into the cream cheese

  6. Add shredded coconut and mix until thick and fluffy

  7. Add drained crushed pineapple, sugar, and a splash of pineapple juice to a small pan

  8. Mix cornstarch and water and stir into pineapple

  9. Cook on medium until thick and glossy for 2–3 minutes

  10. Cool pineapple mixture completely

  11. Add crust layer to jars

  12. Add a thick layer of coconut cheesecake

  13. Spoon pineapple topping over cheesecake

  14. Repeat layers if using larger jars

  15. Top with toasted coconut, whipped cream, or pineapple chunks
